In the vanilla curing process, there are several methods that are used to get the right flavor profile and the desired quality. NEI has been trialing different methods to produce
the good quality at an affordable cost, consistently, thereby ensuring competitive positioning in the market.

This presentation discusses the analytical outcomes of various trials done so far by using both traditional vanilla curing method and the modern controlled vanilla curing method, at pilot scale. The presentation will include results both for vanillin content and for cost of production, with specific learnings at each stage of the curing process.
